The Sundown Chipotle Burger
You may ask "A burger at a restaurant known for Floridian cuisine and seafood"? What makes The Sun House Sundown Burger a true Island treat is the "load" and the awesome Chipotle cheese sauce.

2 lbs Ground Top Sirloin
Make into (4) 8 oz. patties, season with Jerk & Montreal seasonings
Cook to desired temperature, either on the grill or in an iron skillet.

The Load
½ Red Onion – diced
½ Green Pepper – diced
½ Red Pepper – diced
½ cup Portobello Mushrooms - diced
¼ cup Jalapeno Chilies – sliced  (more or less to taste)
8 strips Bacon – cooked crisp and crumbled
Salt & pepper to taste

Sautee onion, peppers & mushrooms with salt & pepper and a splash of white wine until tender (2 – 3 minutes) add Jalapenos and bacon.

Chipotle Cheese Sauce
1 cup Heavy Cream (whipping cream)
½ cup American Cheese - shredded
½ cup Cheddar Jack Cheese - shredded
½ cup Chipotle Pepper
1 tbsp Water

In a food processor, process Chipotle with water until smooth.  In a heavy sauce pan over medium heat, slowly heat cream, add cheeses and continue to stir constantly until sauce thickens.  (careful with heat and stir as this sauce will scorch)  Add Chipotle and stir.

Build Your Burgers
At the Sun House this delicious burger is presented on a toasted Kaiser roll, topped with the "Load" and Chipotle Cheese Sauce.  Accompanied by garlic dill mashed potatoes, grilled asparagus and Plantain garnish.  You can substitute a slice of soft cheddar cheese for the Chipotle Cheese Sauce, but according to Chef Darrell, the sauce is worth the effort.
