APRICOT MANGO RADISH SALSA
1 Ripe Mango Dried Apricots
12 Large Radishes
1 Lime or Lemon squeezed
2 Red Chilies, or 1 Habanero, or 1 Jalapeño
3 Tablespoons Olive Oil, Sea Salt to taste (this balances the sweet flavor of the fruit with the tangy flavor of the citrus) 3 Tablespoons fresh, chopped cilantro (you can also use mint for a different flavor)

Chop all ingredients and mix together. Texture should be chunky. If you use a Cuisinart food processor, pulse just a couple of times.
